●和風豚の角煮☆登場！

豚の角煮ってけっこう手間ですよね、それにお料理屋さんで注文するとけっこう高い！だから私はたくさん作って冷凍します。一品足りない時などは重宝しますー

私は豚の角煮を作るとき焼酎を使います。煮こぼしちゃうのでもったいないと思う方もいらっしゃると思いますが、不思議と油がすっきり抜けるんです。

和風角ﾏ.jpgだいたい3回くらい茹でこぼすと油は抜けますよね。

料理の本では、初めに揚げたり、蒸したりしている方がけっこういらっしゃいますが、私はゆでるだけです。

ゆでるときは、ネギの青い所（捨ててしまうところ）とにんにくや八角を使います。ウーロン茶や紅茶を入れても臭みが取れます。

3回くらい茹でこぼしたら、ゆで卵を入れ和風つゆの素と焼酎で味がしみこむまで煮込み一晩置きます。（薄めに味をつけるのがコツです）

中華風にしたいときは紹興酒を使って、お砂糖・醤油・みりん等で味を調えます。

召し上がる前に、茹でた青梗菜と一緒に盛り付けます。

焼酎は蕎麦焼酎を使っていますが、安い物でも大丈夫です。

そのほかのおかずは、

きのこの白ワイン蒸とおかひじきのおひたしです。

さて、角煮を作った後に美味しいおつゆが残りますよね、これを冷蔵庫で冷やし、固まった脂を取り除いて、こんなん作っちゃいました。

たれを煮立ててそこにじゃがいもを入れます。そしてコトコト煮込むだけです。だしが出ているので、肉なしの肉じゃがって感じですね。残ったたれや煮汁って捨てちゃいますよね、私はいつも何かに使っちゃいます。つゆの素って買うとけっこう高いでしょｗだからなるべく再利用するようにしています。

煮るお野菜はなんでもいいのですが、我が家ではハスやじゃがいもが多いですね。

当然ですが、翌日のお弁当は・・・・
